Grandma's Famous Tomato Soup

This hearty soup has been passed down through generations of our family. Made with our farm-fresh tomatoes, it's the perfect comfort food for any season.

Ingredients

  • 4 large ripe tomatoes from our farm
  • 1 medium onion, diced
  • 2 cloves fresh garlic, minced
  • 1/4 cup fresh basil leaves
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup vegetable broth

Instructions

  1. Preheat your oven to 400°F (200°C)
  2. Cut tomatoes in half and place on a baking sheet
  3. Roast tomatoes for 30 minutes until slightly charred
  4. In a large pot, sauté onion and garlic in olive oil until soft
  5. Add roasted tomatoes and vegetable broth
  6. Blend everything together until smooth
  7. Simmer for 20 minutes, stirring occasionally
  8. Add fresh basil and season with salt and pepper

Chef's Tips

Serve hot with crusty bread for dipping. This soup freezes well for up to 3 months. For a creamier version, add a splash of heavy cream just before serving.
